Marinated Cucumber Salad


Marinated Cucumber Salad

This recipe is adapted from, and is very similar to, the Tangy Cucumber recipe in the New American Heart Association Cookbook (speaking of which, this is one of my favorite low-fat, low-salt, overall healthy cookbooks, every recipe I've tried from it has been delicious).  This has a great combination of sweet, tangy, and spicy flavors, and it light and refreshing.  Now, while cucumbers are on sale 3/ $1, it's the perfect time to enjoy this dish.  The cucumbers are great on their own, or topped with the yogurt dressing.

Marinated Cucumbers
-1/2 cup cider vinegar
-1/4 cup white sugar
-1/2 tsp salt
-1/2 tsp pepper
-1 tsp dried dill
-4 cucumbers, seeded and cut into half moon slices

Whisk together all ingredients except cucumbers.  Toss marinade with cucumbers.  Allow to sit in the refrigerator at least 2 hours prior to serving

Yogurt Dressing

-1/2 cup fat-free plain yogurt
-1 tsp sugar
-1/4 tsp salt
-1 tsp lemon juice
-1/2 tsp dry mustard

Combine ingredients.  Allow to sit in the refrigerator at least 2 hours prior to serving.  Drizzle on top of marinated cucumbers.
