Banana Bread Pancakes


Banana Bread Pancakes

These are every bit as delicious as they sound!  They were a little thick for my taste though, so next time I'll probably reduce the baking powder by a tad.  Serve with a dusting of powdered sugar, or traditional syrup. 

-1 cup whole wheat flour
-1 cup all purpose flour
-2 tsp baking powder
-1/4 tsp salt
-1/4 cup brown sugar
-1 tsp cinnamon
-1/4 tsp nutmeg
-1 cup skim milk
-1 egg
-1 Tbsp vanilla
-3 bananas, mashed
-2 Tbsp butter, melted

In medium bowl whisk together flours, baking powder, salt, sugar, cinnamon, and nutmeg.  Stir in milk, egg, and vanilla.  Stir in bananas and butter.  Drop batter 1/4 cup at a time into a skillet over medium high heat.  Once bubbles form flip, and cook an additional couple of minutes.

These were so good that now I want to try all kinds of fun, exotic pancake flavors.  Carrot cake and red velvet are at the top of my list.  Followed closely by pumpkin pie and gingerbread.  What is your favorite type of pancake?
