I made this "skinny"
Crustless Spinach and Feta Pie. Jeremy and I both thought it was good, and Noah loved it. He kept asking for more until it was all gone. Given the fact that he hardly eats any vegetables right now I think this is a winner for sure. The only changes that I made were to use dried dill and parsley and omit the asiago. This would be great for brunch or a light dinner.
