Asian Cucumber Salad




Asian Cucumber Salad

This is an easy, refreshing, and healthy side dish. 

-4 cucumbers (if not using English cucumbers peel and seed them), sliced into half moons
-1/4 red onion or 4 scallions, sliced
-1 cup rice wine vinegar
-1 teaspoon sesame oil
-1 Tablespoon soy sauce
-1 Tablespoon sugar
-fresh ground black pepper
-1/8 teaspoon red pepper flakes

Whisk last 6 ingredients together in medium bowl. Stir in cucumbers and onion, toss to coat. Chill at least 2 hours or up to overnight before serving.
