Pickled Cole Slaw


This is a light, healthy, and tangy cole slaw.  It's a great alternative to the traditional mayo based cole slaw, especially for picnics where food will be sitting outside in the heat for a while.  This would also be great for topping pulled BBQ sandwiches, or fish tacos.  You could substitute 1/4 head of red cabbage for 1/2 the green cabbage, or use a bagged cole slaw mix in place of the cabbage and carrot

Pickled Cole Slaw

-1/2 cup cider vinegar
-1/4 cup olive oil
-3 Tbsp sugar
-1/4 tsp black pepper
-1/2 tsp salt
-1/2 head green cabbage, shredded
-1 carrot, shredded

In medium bowl, whisk together cider vinegar, olive oil, sugar, pepper and salt.  Toss with shredded cabbage and carrot.  Chill at least 2 hours prior to serving.
