Curried Chicken Salad


Curried Chicken Salad

This is one of our favorites.  It's great on sandwiches, lettuce wraps, pita chips or even tossed with some cooked pasta.  To whip this up super quick and easy you can use a rotisserie chicken or canned chicken.  Sometimes, if I have it lying around, I'll throw in some chopped cilantro also, this salad is equally good with or without it. 

-2 c cooked chicken, shredded or diced
-1/3 c mayo or yogurt
-juice of 1/2 lemon
-1 Tbsp curry powder
-1 Tbsp sugar or honey
-1/2 tsp salt
-1/4 tsp pepper
-1/8 tsp cayenne
-1/2 c dried cranberries or diced red grapes
-2 stalks celery, diced
-1/4 c diced red onion or sliced scallions
-(optional) 1/4 c sliced almonds, chopped walnuts or pecans
-(optional) 2 Tbsp chopped cilantro

Whisk together mayo/ yogurt with lemon juice, curry powder, sugar/ honey, salt, pepper and cayenne.  Toss dressing with chicken and remaining ingredients.  Chill at least 1 hour prior to serving.
