Breakfast Enchiladas

I made these Breakfast Enchiladas.  The few changes that I made were;

-used cooked and crumbled turkey sausage instead of ham
-used low-fat half and half
-added 1/2 tsp black pepper to the egg mixture before pouring over the enchiladas
-used whole wheat tortillas

I thought they turned out really well, and a nice change instead of breakfast casserole on a breakfast for dinner night.  I served them with sour cream and hot sauce.  I thought they tasted like a healthier version of the McDonalds breakfast burrito, which I happen to like.  I'm sure we'll be having these again as breakfast for dinner, or a make-ahead brunch dish.
