Baked Panzanella Caprese


A friend was generous to share a ton of her fresh basil with me, so you will be seeing several new recipes including basil over the next week.  Today I started with Baked Panzanella Caprese for a light lunch.  It was great!  The only thing that I changed was that I used whole wheat sandwich bread for the bread, and it worked great in my opion.  This dish is perfect for a light lunch or dinner, and I think it would make a great breakfast or brunch dish also.
