I made these
Baked Eggs with Kale and Sausage. The changes I made were to use turkey sausage and use the whole 1 lb roll for a 13x9 pan, and to use sharp yellow (not white) cheddar because that's what I had on hand. This was delicious, and would be great with feta instead of the cheddar. It's a little more sophisticated and healthier than the standard egg casserole, and even a little more easier to assemble. Jeremy doesn't like kale, and the combination of cheese, sausage, and finely diced kale was enough to convince him to give it a try, and enjoy it this way.
