I made this
Black Eyed Pea and Spinach Salad by Ellie Krieger (LOVE her!). I didn't have buttermilk on hand so I used 1/2 c nonfat plain yogurt, and 1/4 c milk instead. I also added 2 tsp of sugar to the dressing, and doubled both the pepper and the hot sauce. It produced a tangy dressing, which was a nice contrast to the red onion, black eyed peas, and spinach. Next time I think I'll add a clove of garlic to the dressing also. I really didn't have high hopes for this salad, because it sounded rather plain, but I had all of the ingredients on hand and gave it a try. It was a pleasant surprise of flavor.
