Caprese Baked Eggs


I made this Caprese Baked Eggs for a light lunch, but it would be a great breakfast dish also.  It was delicious!  The only thing I did differently than the recipe was I used two whole eggs, plus two egg whites to fill my dish, and then had to bake a lot longer due to the added volume.
